7 Easy Steps To Prepare Nigerian Jollof Rice

Of course, the party is never complete without the signature Nigerian Jollof rice. 

In fact, some people look for parties to attend every weekend just to have a taste of this Jollof rice.

Other countries have their own kind of Jollof rice, but that of Nigeria is a unique one with a rich blend of ingredients and spices.

Whether you are organising a party, hangout, picnic, or even at home with family and friends, Nigerian Jollof rice is a delicacy everyone can’t get enough of.

The good part is that you don’t have to wait until you attend a party or event before you can enjoy this meal. It is easy to prepare.

Now, let us get you started on your journey to preparing Nigerian Jollof rice in seven easy steps from the comfort of your home.

Ingredients

  • 2 cups of parboiled rice
  • 1 medium-sized onion
  • 5 medium-sized fresh tomatoes (chopped)
  • 1 red bell pepper
  • 2 scotch bonnet or habanero peppers
  • 1/4 cup of groundnut oil
  • 100-gram tomato paste
  • 2 1/2 cups of chicken stock (optional)
  • 1 teaspoon salt to taste
  • 1/2 tsp curry powder
  • 1/2 tsp. thyme
  • 1 tsp. all-purpose seasoning
  • 1 Knorr stock cube
  • Bay leaves (optional)
  • Water

Procedure

  1. Blend your fresh tomatoes and peppers together.

2. Add your vegetable oil into a dry pot and heat it up. Add your chopped onions, and allow them to fry well (be careful not to get your onions burnt).

3. Add your blended mix and tomato paste and stir together to fry well.

4. Proceed to add your seasoning, stock cubes, bay leaves, curry, thyme, and salt.

5. Add stock water (if available) or ordinary water, stir well with a wooden spoon, and leave to cook.

Taste to adjust seasoning if necessary.

6. Pour your parboiled rice (ensure the mix covers up the rice) into the mix and cook over low or medium heat.

Check your rice after about 10 minutes, dip your wooden spoon into the rice, and flip the bottom of the pot upwards to allow the ingredients to circulate evenly.

7. Cook until soft.

Be careful not to overcook your rice so it doesn’t get soggy.

When the rice is soft, reduce the heat and allow it to simmer so the water will get completely dry.

Serve the rice with fried plantains or any protein of your choice.
